Personally, I think the perfect level of tenderness is "pull off the bone," as would be found in the former scenario. Basically, in this particular dish, he's overcooking the ribs so they can be used in a sandwich (which is a great idea). But just because you're overcooking them by many people's standards, there's no reason you shouldn't just do it how you like it.

Mar 10, 2012 - This is the first time I've heard the term "Texas Cheat". My personal philosophy is that if the results are what you want, then ya did it right. I use the 3-2-1 method. 3 Hours of smoking, 2 hours indirect wrapped in foil, then unwrap and 1 more hour of indirect. It gives the outside a nice dry bark with a super moist inside. The meat is attached, but SO tender. Good stuff fo sho.
